Back by popular demand in the Veurink household, I’m featuring our FAVORITE summer drink on the blog today, which we affectionately call “Pool Hangs & Glamping in the Living Room” Watermelon Mules, because they bring us back to a glorious summer several years back where we were hitting up the pool every weekend back in Denver. This is such a refreshing poolside drink! And if you’re wondering about the “Glamping in the Living Room” part, there was one memorable night in which we wanted to try out a new tent that Jamie got, but we weren’t able to go camping that weekend, so we set up the tent in the living room and went “glamping,” complete with string lights and homemade sushi and – yes – watermelon mules. It was so much fun, and I can’t have these watermelon mules without remembering that night.

Jamie and I are both big fans of watermelon, and it’s the shining star of this take on the traditional Moscow Mule. Add a little ginger beer, your favorite vodka (we like Tito’s), and some lime juice, and you’re pretty much set. This drink is not complicated, just really good. You can adjust the ratios to your liking, or even add sparkling water or club soda in replace of the vodka if you want to make it a mocktail.
